German Chamomile (Matricaria recutita) is a species of aromatic flowering herb belonging to the Asteraceae family and the genus Matricaria. This species is native to Europe and Western Asia and is widely cultivated in Nepal, India, Egypt, and other temperate regions. It is an annual herbaceous plant that typically grows 20–60 cm in height and thrives in well-drained soils under temperate climatic conditions at altitudes ranging from 800 to 2500 m, depending on the region.

The essential oil of Matricaria chamomilla is extracted by steam distillation of the fresh or partially dried flowering tops.

Its harvesting season generally takes place during the flowering period, typically from spring to early summer, depending on altitude and local climatic conditions.
