Native to Mexico and domesticated more than 3,000 years ago, the cocoa tree is an evergreen tree, measuring between 10 and 15 m tall in the wild. The other name of the bear fruit is “pods”. They are elongated berries, the size of which varies between 15 and 20 cm.
Cocoa absolute is extracted from the cocoa bean by solvent extraction, originating in China and extracted in France, although now grown all over the world such as Africa, Brazil and Guatemala and many other countries. The cocoa absolute is very thick, dark brown in colour and has a beautiful aromatic richness of dark chocolate. It must be heated before use
